Roccafiore Bianco Fiordaliso

Nestled in the green hills of Todi in Umbria, Cantina Roccafiore grow their grapes in organically cultivated soil. At 75 percent Grechetto di Todi and 15 percent Trebbiano Spoletino, the grapes are grown in clay soil, totally hand-picked when they are perfectly ripe and then gently pressed. The maceration of the must is done naturally and the fermentation process is carried out in steel vats with temperature controlled. Aging takes place for 6 months in stainless and 6 months in the bottle before its release.

Color is straw-yellow wine with golden lights. Bouquets of white flowers and green apple notes. Crispy and dry taste, with a long tasting finish. Pair with: white meat, fish, and pasta with cream sauces.

This 100 percent pinot noir rossato hails from the area of Oltrepò Pavese in north-central Italy. The property has been in the Odero family since 1919, and they had been making mostly commercial wine until now. In 1990, Margherita, the daughter of Giorgio Odero, who had studied oenology in Burgundy, France, decided to replant the entire 24 hectares of pinot noir. Using the French method of saignée, the juice is in contact with the skins for only a short period of time to extract the color.

An easy-to-drink, year-round rosé with a pleasant raspberry aroma, nice tannins, and a good finish. Pair with: pizza, paste con varie salse, zuppe di pesce, formaggi freschi.

De Conciliis Donnaluna Aglianico

Located in the beautiful Paestum region of Campania, the de Conciliis family has produced wine for decades. Made 90 percent from aglianico grapes and 10 percent from Primitivo grapes grown in clay, tuff, and mixed sand and rocks, just slightly above sea level. This Aglianico comes from 7 to 8 vineyards. Stainless steel tank fermentation for 20 to 30 days is followed by a 1- to 2-week maceration. Wine is aged in stainless steel and then released to the market after an additional 3 months bottle aging.

Dark ruby color with intense aromas of violets and licorice. On the palate, the wine is quite complex with a long, velvety finish. Drink now or cellar for 5 years. Pair with: game, roasts, meat ragu, pizza.

Collemattoni Rossi di Montalcino

Based in Montalcino in Tuscany, and owned and run by the Bucci family, this “baby Brunello” is made from the same grapes as the Brunello, only crafted for earlier drinking. Aged for a minimum of 12 months in big Slovenian oak barrels, and further refinement with 3 to 4 months in the bottle.

Typical intense ruby red color, with violet flowers, black cherry, and wild black fruits.
Taste: warm, dry, and with good balance.

Pair with: salami, middle ripe cheeses, first courses (mushrooms soups, risotto, and pasta dishes), and simple recipes with poultry or red meat.
