Earlier this year, Chef Laurent Tourondel’s culinary travels took him to Africa, where he visited Cape Town in South Africa, Nairobi, and the national parks in Kenya. From sightseeing to cooking with villagers, his days were packed with the colorful sights, sounds, and smells of these fantastic cities and their surrounding towns. Local Dishes
Managu
This leafy green vegetable is grown commonly throughout Kenya. It can be quite bitter but loses its edge if it’s left to rest for a couple of days after cooking or by adding milk. For a simple recipe, cook and blanch the green leaves, sauté with onions, and add milk.

Kenyan Chapati
Much like Indian naan, this flat, unleavened fried bread is a staple of Kenya. It’s easy to make with flour, oil, hot water, and salt. Add shredded vegetables for flavor.
Ugali
With the consistency of a polenta, ugali is the perfect accompaniment to stews, curries, or vegetable dishes. Its main ingredients are maize flour, water, butter, and salt.

In Kenya, any gathering is an excuse for eating nyama choma, Swahili for roast meat. Goat on a grill is eaten with the hands. Cook simply with oil and salt and pepper.
Kachumbari
This is the perfect, uncooked side dish to pair with your goat. A light and refreshing mixture of tomatoes onions, lime juice, coriander, and chili.
Chili Mixture Sauce
Not for the fainthearted, it’s made of gin, vodka, cherry, and green peppercorns. Try it with the roasted goat.

Discover Cape Town
Discovered in 1487 by the Portuguese, who were looking for a sea route to the east, the Cape Town peninsula was first called Cabo Tormentosa, the Cape of Storms, with its headland later called Cabo da Boa Esperanca, or the Cape of Good Hope.
The best time to head to the Cape is in its summer months from November to March.

Discover Kenya
Kenya capital, Nairobi, was founded as a colonial railway settlement in the late 1890s. It’s named after a watering hole known to the indigenous Maasai as Enkare Nairobi — or Cold Water.
Chef Tourondel enjoyed safaris in Nanyuki and the Samburu National Reserve, where he photographed the local Samburu villagers, descendants of the Maasai, who paint their faces with striking patterns to accentuate their facial features. Samburu means butterfly in a neighboring language, but they call themselves Lokop.

Tourondel was fortunate to be invited to a local wedding in a small village near the Sasaab Lodge, where he watched a ritual dance and ate goat brain stew for his main course.

The best months to view wildlife in Kenya are during its dry season from late June to October.
